How the game got it’s name:

Canfield is named after Richard A. Canfield who owned a casino in New York during the 1890s.  Gamblers would buy a chance to play the game for $50.  The player would earn $5 for every card they managed to place into the Foundations.  If one were to place all 52 cards into the Foundations, the gambler would win a total of $500.  Canfield is a challenging game, so Mr. Canfield ended up with the better end of the deal.
